Cappadocia Testi Kebab
Cappadocia Testi Kebab is a kebab prepared by placing beef or lamb, various vegetables, and spices in jugs made in the Avanos district of Nevşehir province, covering them with dough, and baking them in the oven for 2-2.5 hours.
The ingredients inside the jugs are not preheated. The jugs made in Nevşehir province bear the characteristics of Avanos Pottery, registered number 293. Nevşehir Testi Kebab is usually served by breaking the jug in which the kebab is cooked.
The preparation of Nevşehir Testi Kebab is a masterful process, handed down through generations. First, the meat is placed at the base of the jug, then the other ingredients are added, and the preparation, cooking, and presentation are all achieved through years of accumulated expertise. Nevşehir Testi Kebab was registered by the Turkish Patent and Trademark Office on August 9, 2021, and received a geographical indication.
